Happy Mother's Day! If you haven't already, it's not too late to make mom breakfast-in-bed (she's should be sleeping in anyway)! These baked pancakes are so easy, taste fantastic, and best of all are braces-friendly. Make them for mom today!
Preheat oven to 350 degrees; spray 8x8 baking dish with nonstick cooking spray.
In a large mixing bowl, beat milk, butter, and egg; add sugar; then gradually beat in flour. Carefully stir in baking powder and salt. Gently stir in bananas and blueberries.
Pour batter into baking dish and bake approximately 20 to 25 minutes.
Cut into squares, top and garnish with whatever you like (we love maple syrup, turkey sausage and fresh fruit)! A perfect recipe to make for your beautiful mom on Mother's Day!
