Chicken Avocado Orange Quinoa (Gluten-Free)

This might be my favorite quinoa recipe yet!  Avocados are perfectly in season and the fresh oranges add the perfect amount of sweetness.  And as always, great for eating with braces!




  • 1 c quinoa (cooked according to package directions
  • 1/4 c lime juice
  • 1/2 c chopped cilantro
  • 1 tbsp minced garlic
  • 3 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 4 large oranges (peeled and segmented)
  • 2 avocados (peeled an cubed)
  • 1 lb roasted shredded chicken breast

Sauce (for chicken)

  • 1 tsp chile powder
  • 2 tbsp minced garlic
  • Zest of 1 lime
  • 2 tsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp pepper



Combine cooked quinoa with lime juice, cilanro, garlic, olive oil, salt and pepper, oranges, and avocados; stir together.

In a large bowl, stir together sauce ingredients: chile powder, garlic, lime zest, olive oil, salt and pepper.  Add chicken to sauce and toss to coat chicken evenly.

Add chicken to quinoa mixture and gently stir it all together.
