This might be my favorite quinoa recipe yet! Avocados are perfectly in season and the fresh oranges add the perfect amount of sweetness. And as always, great for eating with braces!
Sauce (for chicken)
Combine cooked quinoa with lime juice, cilanro, garlic, olive oil, salt and pepper, oranges, and avocados; stir together.
In a large bowl, stir together sauce ingredients: chile powder, garlic, lime zest, olive oil, salt and pepper. Add chicken to sauce and toss to coat chicken evenly.
Add chicken to quinoa mixture and gently stir it all together.
