Colorado Peach Caprese Salad (Gluten-Free)

What You'll Need

  • 2 large, ripe Colorado peaches 
  • 16 oz fresh mozzarella 
  • 16 chopped basil leaves
  • 8 chopped mint leaves
  • balsamic vinegar to drizzle
  • olive oil to drizzle
  • pinch of salt
  • pinch of pepper



Slice peaches and mozzarella about 1/4" thick; arrange on plate in layers.  Sprinkle chopped basil and mint evenly.  Drizzle a small amount of vinegar and olive oil and add a pinch of salt and pepper if desired.  Serve fresh and enjoy!
