Frittata is quiche's low-carb cousin - and is also one of my favorite dishes for any meal! Feel free to change up any of the veggies or even add meat of your choice. This recipe is super easy and crazy delicous any way you cook it. And of course, safe for braces!
In a medium oven-safe skillet, heat olive oil over medium heat and cook greens until wilted. In the meantime, whisk together the 6 eggs and 6 egg whites. Add shredded cheese to egg mixture and stir in.
Pour egg and cheese mixture into skillet. Add sliced tomatoes.
Bake in oven at 350 degrees until eggs are cooked through. Enjoy!
