Easy White Chicken Chili (Gluten-Free, Low-Fat)

Fall and winter always call for something warm and delicious, and this easy recipe is just that!  Put everything in a slow-cooker/crock-pot, let it simmer, and come home to dinner!  This meal is tasty, easy to make, and easy on the braces!

Ingredients

  • 1 lb chicken breast (cut into about 1/2-inch pieces)
  • 1 onion (diced)
  • 1 clove garlic (chopped)
  • 2 cans chicken broth
  • 2 cans green chiles
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp oregano
  • 1/2 tsp cayene pepper
  • Fresh ground pepper to taste
  • 1 can corn
  • 1 can garbanzo beans
  • 1 can cannellini beans
  • 8 oz low-fat cream cheese
  • Shredded cheese for serving

Directions

In a slow-cooker, add chicken, onion, garlic, chicken broth, green chiles, spices, corn, and beans.  Cook on low for 4-6 hours until chicken is cooked through.

Stir in cream cheese until melted and evenly distributed.

Sprinkle with cheese for serving.  Enjoy!
