We ♥ Mexican food! This baked pasta dish is soft for braces, has plenty of protein from the ground turkey and black beans, and is absolutely delicious! Make sure to use the low-fat and gluten-free versions of the ingredients to keep it nice and healthy. An easy weeknight family meal!
Cook gluten-free pasta according to directions, drain, and save for later.
While pasta cooks, spray large skillet with non-stick cooking spray. Cook onions for about 2-3 minutes, then add ground turkey and cook until crumbly, brown, and cooked through. Add taco seasoning and stir until evenly coated.
Add sour cream, enchilada sauce, corn, black beans, and 1 c shredded cheese and stir together.
Add pasta; mix together; transfer to large baking dish and sprinkle with remaining 1 c of shredded cheese.
Bake at 400 degrees for about 15-20 minutes until cheese is melted. Enjoy!
